Salmon pasta surprise.

Today I finally finished preparing my next book’s manuscript, ready for layout. It has been an intense few months. To celebrate, I splashed out and bought two small, freshly-cut salmon fillets. I felt like pasta – but didn’t want to put these precious fillets into the pasta. So this dish happened.

At the bottom of the bowl is purplish home-made spaghetti (flavoured with powdered beetroot). The creamy pasta sauce is made with red onions, garlic, paprika, green peas and capers. Above that are baby spinach leaves topped with the salmon fillets (simply spiced with black pepper and pan fried in butter), and sprinkled with chopped parsley, spring onions and nasturtium flowers.

A squeeze of lemon and a grind of pepper complete the picture.

This was so good. The salmon (still pink in the middle) flaked apart and was perfectly balanced by the fresh green spinach, piquant capers, creamy sauce, sweet peas and peppery nasturtium flowers.

And now I wait to to see the first designed pages of the book . . .
